- 300 grams of breast boneless chicken cubes
- 3 ½ tablespoon cooking oil
- One teaspoon ginger paste
- 1 ½ to 2 tablespoon lemon juice
- Salt as required
- ¾ teaspoon red chilli powder
- ⅛ teaspoon turmeric
- One tablespoon chopped or minced ginger
- ½ tablespoon garlic
- One green chilli slit
- One large onion chopped
- ½ teaspoon sugar
- One teaspoon cajun spice mix or garam masala or garam masala powder
- ½ tablespoon soya sauce
- fresh mint leaves or pudina finely chopped
Method:
Wash the chicken and dry on absorbent paper. Cut into 2.5cm or 1-inch cubes. In a medium bowl add chicken cubes, ginger paste, red chilli powder, salt, turmeric, lemon juice and oil. It is the important to smash chicken along with half of a large lemon juice.
Smash the chicken and set sideways for at least 1 hour 10 minutes.
Add two tablespoon cooking oil to the hot medium saucepan and fry chopped ginger and garlic with medium heat.
Fry until when ginger garlic begins to smell good, add green chilli slit, salt, sugar and onions. Fry until the onions turn soft.
Add smash chicken along with lemon juice in saucepan. Turn down the heat to low, Stir and fry till the chicken is half brown cooked.
After 10 to 15 minutes put garam masala or cajun spice mix or allspice. Mix and fry until you begin to fragrance the spice well, for 3 to 5 minutes.

Add soya sauce and cook until the chicken is tender and soft cooked. Taste the chicken and add red chilli powder, salt and spice as needed. With an adding of all these the sweetness from lemon juice gets stable.
Add finely chopped mint (pudina) leaves or celery and fry until the mint leaves wilt with low heat.
Chicken should look moist, complete tender and soft cooked now. Switch off the heat. Empty the chicken into the dish and garnish lemon chicken with fresh mint leaves. Serve with rice.
